Keto “Sugar” Cookies
There’s nothing better, than a warm sugar cookie & a cup of coffee! Except this recipe’s actually good for you!
Ingredients:
- 1 cup Monk fruit sweetener (or your favorite no sugar sweetener)
- 1/4 cup butter (or Ghee), softened
- 2 large eggs
- 1 tsp. vanilla
- 2 cups blanched almond flour
Directions:
- Preheat oven to 350°F & line baking sheet with parchment paper.
- In a large mixing bowl mix together butter & monk fruit until creamy.
- Add vanilla & eggs until mixed in.
- Fold in almond flour until dough is formed.
- Using a teaspoon or cookie scoop for 12 to 15 balls & place on cookie sheet.
- Press down on each ball or form a cookie.
- Bake for 15 to 18 minutes, depending on oven.
- Remove to cool.
- Sprinkle with extra monk fruit or frost with sugar free frosting (if desired).
Note: 2 net carbs per cookie.
