Low Carb Pecan Stuffing
This could be on your next Thanksgiving table & everyone will give it rave reviews! But why wait for Thanksgiving? It’s marvelous to eat as a main dish if you want to add some rotisserie chicken to it!
Ingredients:
- 2 T. butter, ghee or coconut oil
- 1 yellow onion, chopped
- 3 ribs of celery, chopped
- 1/4 tsp. thyme
- 1/4 tsp. sage
- 1/2 tsp. homemade poultry seasoning
- 1/2 tsp. onion salt
- 1 cup chopped pecans
- Salt & black pepper, to taste
Directions:
- Heat a large skillet over medium high heat. Add butter.
- When butter has melted & has stopped bubbling add onion & celery.
- Cook onion & celery, stirring occasionally until the edges of onion begin to brown & onion is becoming translucent. Onions and celery should both be soft. Reduce heat to medium.
- Stir in thyme, sage, poultry seasoning & onion salt. Stir to combine.
- Add pecans. Stir & cook for about three minutes.
- Add salt & pepper (to taste).
